Healthy chicken soup

The old wives tail that chicken soup has special properties to help fight colds and flu may in fact be true. A compound known as carnosine is said to help the body's immune system. There are many recipes available online, but I have come up with my own version over the years which does not require blending, oil or cream.

Ingredients
One tin of sweetcorn
One bag of carrots
Cabbage/Kale (whole or bag)
Pack of bone in chicken legs or thighs (skin removed)
Garlic and ginger chopped
Pepper
Chicken stock cube (1 or two)
Leeks
Onion
Butter beans (optional)
Parsley (for serving)
Tabasco (for serving)
Lemon (for severing)
Choice of bread (I prefer a brown super-seeded bread)

Method
Drain the sweetcorn and butter beans (if using) and add along with the ginger and garlic to a large saucepan filled with water. Peel and chop the carrots into small pieces and add along with the greens to the pan. Next chop the onion and leeks and submerge these in the water. Finally add the chicken and one stock cub. Finish with a large grating of pepper and bring to boil. You will then need to simmer for about an hour and a half. Remove the chicken and take off the bone before serving if required. Add Tabasco, lemon and parsley to taste.
